The Culinary Supervisor will have a basic understanding of a kitchen operation within the hotel. They will be responsible for producing a consistent, quality product that meets and exceeds the guests' needs in a timely manner. This individual has basic skills in department training and is capable of assuming department responsibilities in the absence of the Sous Chef, along with skills and knowledge including culinary education, basic cost control understanding, basic communication, leadership skills and computer skills. They may assist in monitoring payroll costs & overtime. Responsibilities include the supervising of hourly cooks.
Key Responsibilities
- Evaluate and optimize kitchen workflows, food production efficiency, and banquet execution in high-volume environments.
- Identify operational inefficiencies and implement scalable solutions to improve throughput, quality, and cost control.
- Analyze food cost structures, menu performance, and yield management; provide menu engineering and cost-control recommendations.
- Standardize recipes, portion controls, production benchmarks, and operating procedures to ensure consistency and reduce waste.
- Develop forecasting-based production plans and quality assurance systems to support financial and operational goals.
Qualifications
- Culinary degree or minimum one year of high-volume kitchen management experience required; three years of line experience preferred
- Strong cooking fundamentals with the ability to perform independently in a fast-paced environment.
- Proven leadership, effective communication skills, and commitment to guest satisfaction.
- Proficient administrative skills/Microsoft Office
- Flexible availability, including weekends and holidays; ability to stand for extended periods.
